Brianna Henton, Youth Engagement and Outreach Director at the United Dairy Industry of Michigan, pointed out that the reintroduction of whole milk into school meals is facing dual challenges in terms of cost and storage. Although schools already have the option to add whole milk to their menus, the U.S. Department of Agriculture still needs to establish relevant rules and standards to support this initiative.

Henton stated: "Schools do have the option today to put whole milk on the menu, but the USDA still needs to develop those proposed rules and standards to support that within the school meal pattern." She emphasized that the limitation of only being able to offer whole milk during lunch, along with the logistical issue of storing additional refrigerated products, are factors schools must consider before making changes.

Regarding costs, Henton shared: "When you think about a school district feeding thousands of kids, even a few extra cents per carton of milk becomes a significant amount in their budget. That has to be considered when offering whole milk. School meal budgets are very tight; every penny counts." This indicates that the promotion of whole milk may be impacted by budget constraints.

To address these challenges, the Dairy Checkoff Program is supporting food service directors by providing nutrition education resources and school supply chain planning. This program aims to help schools manage the introduction of whole milk more effectively while balancing nutritional needs and operational costs. The return of whole milk is not only about nutritional improvement but also involves the coordination of logistics and finances.
